Unexpectedly a great and fast read! (only took about an hour)
The book by Maira Kalman is actually the authors own personal diary of her travels over a year. While reading this book, I was amused with every self illustrated page and the humour behind each story. What excited me more? By the end of the book a surprise awaited for me…. A recipe for Honey Cake! The very one that made my mouth water at every instance it was mentioned. >Take a Bundt pan and smear with butter and a fine coat of bread crumbs.
4 large eggs, 3/4 cup sugar, 1/2cup corn oil, 3/4cup dark honey, 3 cups flour, 1tablespoon baking powder, 1/2 teaspoon baking soda dissolved in teaspoon of water, 1 1/2 very strong tea (cooled), 3 teaspoons each of ground cloves, cinnamon, ginger, and cocoa.
With medium speed mixer, mix sugar and eggs- add one egg at a time until blended. Slowly alternate some flour and some tea into batter. Mix spices together and pour into batter. Add baking soda. Gently mix. Bake at 350 degrees for approx. 45 min.
A slice of cake was well enjoyed the next morning toasted with butter, yumm!
